Taste of Home winning recipe: Chicken Enchilada Soup

Cassandra McShepard says

“The recipe mentioned no seasonings so I added 1 tsp of Sea Salt, 1 tsp chili & lime seasoning and a dash of sugar.

Also I used a rotisserie chicken.”

Ingredients:

4 cups fat-free chicken broth
1 1/4 cups chopped celery
1/2 cup diced onion
1 small can green enchilada sauce
1 15 oz can pure pumpkin
10 oz chopped boneless chicken (I’ve used thighs and breast both good)
1 cup frozen white corn
1 tbsp olive oil

optional dash of hot sauce
optional shredded cheddar cheese
optional crushed tortilla chips

In a large pot heat oil and cook onion and celery until translucent, add broth and bring to a boil, stir in enchilada sauce and pumpkin.  Return to a boil add raw chicken and corn.  Simmer for 10 minutes.. top with cheddar cheese and tortilla strips if you want.
