Additional note from Nicole Koglin – Great recipe for football party! I used low fat cream cheese, figured it would be tough to tell with all that delicious sausage! It tasted great.

One note: next time I’ll be more careful to drain the Rotel tomatoes & chilies REALLY WELL.

Think it’s probably best served fresh.

8 oz cream cheese (I use full fat, but you can use lower fat if you like)

1 10 oz can of mild ROTEL tomatoes/chiles (drain the liquid off)
1 4 oz jar or can of jalapenos (drain the liquid off)
1 16 oz package fully cooked Italian sausages
One bag of chips of choice (I use tostitos scoops)

Combine ROTEL, jalapenos, and cream cheese in a large bowl.

Take the sausages, remove the casings, and crumble into a skillet. Cook until brown. Add to the cream cheese mixture while hot (the heat softens the cream cheese). Mix well and dig in!
