10-12-11: IL MITO's Cranberry, Cherry & Ginger Sauce
Serves 6 to 8
o 24 oz of frozen cranberries
o 3 oz chopped, dried cherries
o 3 tablespoons of grated ginger
o 1 garlic clove, diced fine
o 2 oz mint, chopped fine
o 14 oz brown sugar
o 2 tablespoon of smoked sweet or spicy paprika
o Zest of 1 lime
o 1 tablespoon of ground cloves
o 1/2 cup of white wine
o 1.5 cup of water
o 1/2 cup pineapple juice
1. Bring the white wine, water, pineapple juice, sugar, garlic and mint to a boil. Once boiling, blend.
2. Add all remaining ingredients and stir well, reduce heat.
3. Let simmer until all cranberries have popped and the mixture has thickened. Serve at room temp.
